Thai Crab Soup

Ingredients
  • 120g Ocean Isle Premium crab meat
  • 0 Red Chile Pepper '1 tsp fine diced'
  • 0 Green Chile Pepper '1 tsp fine diced'
  • 0 Red Hot Chile Pepper '1/2 tsp fine diced'
  • 0 Spring Onions '1 tbsp - finely chopped'
  • 0 Fresh Ginger '1 tsp fine diced'
  • 0 Coriander, fresh '1 tbsp chopped'
  • 0 Limes '1/2 tsp zest'
  • 0 Limes 'juice of half'
  • 0 Lemon Gras '1 tsp finely chopped'
  • 1 litres Chicken Stock
Method

1. Bring chicken stock up to the boil.

2. Add Chile, ginger, lime zest, lime juice and lemon gras and simmer for 2 minutes.

3. Warm crab meat and divide between four bowls.

4. Add the chopped coriander to the soup and pour some over the crab meat, leaving the remainder in a soup tureen.

5. Garnish with a further sprinkling of coriander and serve.
